I’ve been collecting recipes for many years now. Here are a few of the ones that caught my eye. Although you may find it in one category, it could easily fit into another i.e. an appetizer could also be found in a main etc. Some have been tried, my comments usually show up in italics if I have made them. I’ve given credit to Chef’s/authors/publishers whose names I wrote down when recording the recipes, but go figure – in at the tail end of the boomer generation and blogs didn’t exist when I started collecting them and I never thought of a website either. If I’ve violated any copyrights – just let me know and I’ll fix it. If you try a recipe and have comments, please let me know, I’ll respond. As always – enjoy! Thanks – Chris (cater@foodinspires.com)

Potato Chip and Peanut Cookies

Sometimes you just want a no-nonsense cookie. Easy to make, easier to eat and that satisfies that sweet and salty combination of tastes. This is it my friends. I found it in my archives, completely hidden amongst other recipes that weren’t cookie related. Glad I did coz they are delicious and so easy to do. [...]

Irish’ish Bacon Soda Bread

Happy St. Patrick’s Day! A time when the majority of people become Irish for the day.  I always get inspired by holidays celebrated by different cultures.  The food always excites me and I usually can't wait to try making them for myself.  So really, what I'm trying to say is I love to cook anything [...]

Lemon Crumble Breakfast Cake

Hey, I don’t make up the rules, but if it says Breakfast Cake, is it really a cake? I was sent this recipe by one of my followers on social media (thanks Judy!). It is a Lemon Crumble Breakfast Cake. It had a lot of boxes checked off from my list, lemon – check, crumble [...]

Tuna Vegetable Strudel

I love cooking with things I forgot about in my fridge.  I call it leftover cooking and I do it about once or twice a month.  I find it's easier than actually figuring out what to cook for dinner each night. Making something delicious and new from these finds along with one or more pantry [...]

Chocolate Pudding – A Valentine Treat

Does anything say loving more than Chocolate Pudding!! You have lots of time to make this, you only need unsweetened cocoa, any type of nut milk (I used almond, but the original called for oat milk - either would work as well), and some dark chocolate. Garnish with anything you want, I happened to have [...]

Superbowl Spicy Tamarind Ribs

So I understand it's that time of the year again!  Valentine's Day - just kidding, until it's here on Monday!  It's Superbowl time and for me, that means great  snacking food!  Oh I know there are a couple of great teams playing and of course the half-time show is always a big draw, not to [...]

Celebration of the Lunar New Year – Almond Cookies

This is a lovely recipe for a delightful cookie that always reminds me of the walks my girlfriend (relax, she's now my wife) and I would take through the streets of Chinatown! I've mentioned before that she has a sweet tooth so inevitably, we would enter more bakeries to see, smell (and eventually) taste the [...]

Persimmon Cake

Don't you love persimmons?!  I do, delicious orbs of goodness that scream to be chopped or quartered and added to an arugula or spinach salad. Maybe diced into a fruit salad with mango and blackberry or just enjoyed as mid day pick-me-up snack. Research always gives me so many ideas apart from those mentioned above, [...]

Slaw with Lemongrass and Curry Leaf Dressing

Do you like salads? Typically for me, a salad is a filler so not a “go to” choice for me. I know – damn carnivore! But it is a new year and time to try and eat healthier, let’s see how long I can do this. This is inspired by Nik Sharma’s Curry Leaf Vinaigrette [...]

Curry and Maple Cauliflower

Here is a delightfully simple and delicious cauliflower dish. I don't know about you but I've eaten way too many sweets Christmas 2021, so let’s start 2022 off on the right foot. This recipe hits all the right spots. In every bite there is sweet from maple syrup, spice from some store bought curry powder [...]
