Fast and Easy – Curried Squash

This is a great dish on its own, with some naan or other flatbread, or as a side to accompany meat, fish or even with a salad. I was going to call it Caribbean squash because of the vibrant colors but I didn’t have any Jamaican Curry Powder – I know, who runs out of Jamaican Curry Powder – shameful. The star of the show is the butternut squash – before you groan, see my notes below – colorful peppers, jalapenos, curry powder and onion – not necessarily in order of quantity. I know! Butternut squash is one of those […]

Fast and Easy – Raw Beet and Herb Salad

As the days get warmer, we want to spend less time in the kitchen. That is unless you like being in the kitchen as much as I do. Regardless of time spent in the kitchen, this is a remarkably cooling salad. Without too much effort, you can have this refreshing crisp salad – make lots so you can have it again the next day. It will keep, as long as you don’t dress the herbs. The most interesting part of this salad – no lettuce – of any kind! It’s an adaptation of Yotam Ottolenghi’s Beet Salad. I used beet […]

Fast and Easy – Eggs in Tomato Curry

This is a recipe adapted from “Classic Indian Cooking” by Julie Sahni. I love the flavors of this recipe. I love the flexibility of this recipe. It makes a great curry base which you can easily make lots off, freeze and bring out later for easy home made meals. I modified it to fit with our criteria for the “Fast and Easy – Meals in 30 minutes“. It is so versatile that you can add just about any type of protein, vegetable to it. I will list variations in the “Substitutions and Alterations” section at the end of the recipe. […]

Fast and Easy – Buttermilk Biscuits

You need to know how to make a good biscuit. There are tons of recipes out there but this is a lovely tasty and versatile recipe. In other words, if you can make this, it can be an accompaniment to a soup, a dish with gravy/sauce, a breakfast addition – well you get the idea.  You can also impress the heck out of friends and family – everyone loves a biscuit! It does contain buttermilk, but don’t let that deter you. My rule is if it contains buttermilk in the title of the recipe, I recommend buying ready-made buttermilk. If […]

Fast and Easy – Pasta with Bagna Cauda Sauce

Bagna Cauda is a wonderful Italian dip. It literally translates to “hot bath”, and was used to dip vegetables in.  It comes together in minutes and this is another application for the dip. The stars of this show are anchovies, garlic and a tremendous supporting role by olive oil. Even if you don’t like anchovies, this is a recipe you must try. There is no fishy taste as you might think, but the anchovies add a delightful saltiness to the dish.  They slowly dissolve in the hot (do I have to say good quality) olive oil and garlic. When I was […]

Fast and Easy – Mushrooms and Barley

I originally posted this blog in 2015, but it lent itself so well to this section that I updated some of the Substitutions and Alterations. This is not only good for you but so versatile. I used cremini mushrooms but really any type will do. The secret – not really, is to sear the mushrooms well until all the water has been released and they take on some color. Slice them as thin or thick as you like. If I am lucky enough to find the small white button mushrooms, I actually leave them whole and saute them. Serve it […]

Fast and Easy – Salmon Poached in Coconut Milk, Thai Chilies and Lemon

Another delicious and really satisfying one dish meal! Make sure there are no cell phone cameras around to catch the expressions on your face as you devour this meal, you may end up as a meme someplace. When you are done with the fish and veggies, grab a bread stick and go at it – too good to waste any of the poaching liquid. I added shrimp to mine, the baby ones, cleaned. The star is the fish, that’s why I used baby shrimp – really just a filler, as I had it in my freezer – so completely optional. […]

Fast and Easy – Za’atar Chicken with Carrots and Celery

For this recipe you will need the following ingredients: 2 boneless skinless chicken breast (buy these in bulk packages, usually 8-9 per package, and freeze in individual meal portions i.e. if cooking for 2 – freeze 2 per bag and label the bag using a permanent marker with the item name and date “2 Chicken breasts 020717” – really, everything looks the same when frozen!) 1 medium carrot, chopped 2 stalks celery, chopped 1 tbsp. za’atar spice mix Olive oil, salt and pepper Pre-heat the oven to 400f Line an 11” x 17” rimmed baking tray with parchment paper – […]

New – Fast and Easy – 30 Minute Meals

I’ve been asked – a lot, by my 20/30 something kids, nieces, nephews and their friends, to put together some simple recipes with a few ingredients that can be made in 30 minutes, give or take a few. It must take little effort and it must come together easily, be nutritious and delicious. Tall order I thought! Remember, my training was classical French – read butter – need I say more?! So it’s taken me a while to put together some ideas, but I’m now ready to launch this series. These recipes are really for anyone who wants to make a […]
