I hear there’s a game on tonight! I say this, tongue in cheek as I’m really not a big fan of watching the game, most definitely the half time show though, and I have been known to partake – actively, in the consumption of food and drink in the post game celebration – no matter who wins! But noticing the effects of things like conventional nachos on my unconventional cholesterol count, I try and incorporate some green stuff with my food. I got inspired by everything posted everywhere about superbowl food. So here’s my take on nachos, with a twist. I didn’t want to call it healthy as that is a subjective word, so it’s a twist on conventional nachos. It took 30 minutes to put together and has some home made and store made stuff in it. Serve the salad with olive oil, salt and pepper – that’s all a good salad needs. Serve in plates with lots of napkins and a fork. 6 hot Italian sausage links, casing removed and crumbled
1 lb lean ground beef
1 large onion, large dice
1 red pepper, diced
2 tbsp. ground cumin
1 tsp. ground coriander
2 tsp. chili powder
2 tsp. garlic powder
1 cup kale mix or arugula or just plain shredded lettuce (why mess with a good thing)
1/2 cup flaked reggiano parmigiano
1/2 cup mixed dried fruits/nuts – dried cranberries, sunflower seeds, etc
4 jalapenos diced, divided – my jalapenos weren’t hot, so I added about 6 Thai chillies, chopped fine to the cooked mixture and the finished product
Olive oil
1 packet Tostitos scoops
1 cup good quality hot salsa – store bought
salt and pepper to taste

Brown the sausage and beef in a large frying pan – drain excess oil
Add the diced, pepper, half the jalapeno, and the onion – stir well – fry for a few minutes
Add the spices – stir and mix well – continue to fry until onions and peppers are softened
Season with salt and pepper and assemble
Lay the greens on a platter
Fill the scoops with some of the cooked mixture, top with salsa, place on top of the greens – continue until the platter is filled
Sprinkle with the flaked parmesan, remainder of the jalapenos and dried fruits/nuts mixture
Serve – with passion!
