We had these on the weekend! We weren’t going away and it is so cold, we just needed to feel like we were in the tropics. Inspired by my son (who was home for the Family Day weekend) and daughter who wanted only veggies for diner. My son paid some of his way through University with a part time job as a bartender so I put his skills to the test – he passed (but then give me enough Tequila and it’s all good). It’s a meat free sandwich packed with taste and contains vegetables cooked on a grill pan.

I used a red pepper but use any color you like – yellow or orange work just as well, eggplant, mushrooms, Thai chillies and onions. I used a grill pan to get the nice marks and char taste and seasoned with balsamic vinegar, salt and pepper. That’s pretty much the recipe but here goes. As always – enjoy!

Ingredients
1 small eggplant, 1/4″ slices
1 red pepper – sliced
1 small package mushrooms – sliced, any type will work, use your favorites
1 – 2 onions, thickly sliced
6 – 8 Thai chillies cut in half
1/4 cup feta cheese crumbled
Olive oil
Salt and Pepper to taste
Balsamic vinegar
6 Whole Wheat Croissants

Put some olive oil in a grill pan and get it hot, ensure the entire pan and raised surfaces are coated
Place the eggplant onto the grill pan and cook, remove and roughly dice – cover
Add the sliced peppers and Thai chillies onto the grill pan and grill until soft and browned
Remove the peppers and chillies and cover to keep warm – note, do not let the Thai chillies burn, there will be plenty of coughing
Add the onions to the grill pan, stir to soften and let caramelize – remove
Put the sliced mushrooms into the pan – move around gently until all the liquid from the mushrooms has been released and the mushrooms are cooked
Combine all the vegetables – season with salt, pepper and balsamic vinegar
Slice the croissants in half without breaking through
Pile the vegetables inside, top with the feta
Enjoy with the pitcher of Margarita’s (I’ll get my son to send you the recipe!)
Note: I had leftover filling, it tasted great the next morning in scrambled eggs!
